After beginning his career in our own Merchant Hotel, chef-owner Niall Duffy has went on to train in some of the best restaurants in the UK and Ireland, including The Ritz, London (1 Michelin star), Restaurant Patrick Guilbaud (2 Michelin Stars) and Restaurant Gordon Ramsay (3 Michelin stars).
Coming back to Belfast, he wanted to see how his skills would transfer to a casual French Bistro – and so Marcel was born…
